Orange Juice Cake

Ingredients

  • 1 ½ cups  granulated sugar

  • 1 cup vegetable oil

  • 4 large eggs 

  • 1 teaspoon pure vanilla extract

  • 3 cups all purpose flour

  • 3 teaspoons baking powder

  • 1 teaspoon salt

  • 1 cup orange juice

  • 1 tablespoon orange zest

Directions

  1. Preheat the oven to 350°F (180°C), and grease and flour a bundt pan and set aside.

  2. In a mixing bowl, whisk sugar with vegetable oil and eggs. Mix in the vanilla extract.

  3. Add flour, baking powder, and salt. Add the orange zest and whisk the batter until everything is just combined.

  4. Add orange juice and give the batter a quick mix. Do not over mix the batter.

  5. Pour batter into a prepared cake pan, and bake for 50 minutes or until a toothpick comes out clean.

  6. Allow the bundt cake to cool in the pan for 20-30 minutes, then tip it out onto a plate to serve.
