Blueberry Chia Pudding Ingredients 1 Cup (250ml) frozen blueberries 1 Cup (250ml) almond milk or other plant basted milk 2 tablespoon maple syrup or honey ½ tablespoon vanilla paste or vanilla extract 5 tablespoon chia seeds topping, natural or vanilla yoghurt and fresh blueberries Directions Start by adding the frozen blueberries to a microwave safe bowl and cook on hight heat until they are bursted and start to bubble. Mash with a fork or mix in a blender for a smoother result. Stir in the rest of the ingredients until there are no lumps. Let it sit for 5 minutes and stir again. Cover and refrigerate over night. Lentil Soup Ingredients Pasta (bucatini, spaghetti, penne…) Canned tomatoes Onion Garlic Extra virgin olive oil or olive oil Parmesan cheese Fresh basil Salt & pepper Directions Bring a large pot of salted water to the boil. Start cooking the pasta about 5 minutes after you start making the sauce. Cook pasta per packet instructions until al dente. Reserve ½ cup of pasta cooking water, then drain pasta. Heat the olive oil in a large pan and when it starts shimmering add the diced onion. Cook over medium heat until soft and translucent, it will take 5-6 minutes. Stir in the minced garlic and cook for 2 minutes until fragrant. Add the tomatoes, salt and few twist of black pepper and give a good stir. Let it cook over medium heat for about 15 minutes until it's slightly reduced. Stir occassionally, and if you use whole tomatoes break them with a back of a spoon. When the sauce is ready, taste and adjust the seasoning according to your liking. Add the drained pasta to the pan along with the fresh basil and toss until well combined. Add a touch of reserved starchy water to make the pasta juicer and moist. Serve with freshly grated parmesan cheese and more torn fresh basil leaves. Freshly ground black pepper and a drizzle of extra virgin olive oil to serve are optional. Enjoy! Back to Recipes

APPLE PIE Ingredients 1 1/2 can apple pie filling 1 tablespoon lemon juice 1/4 teaspoon ground cinnamon 1 pastry shell (9 inches), baked 1/4 cup all-purpose flour 1/4 cup packed brown sugar 2 tablespoons cold butter 1/2 cup chopped pecans or walnuts 1/4 cup quick-cooking oats 3 tablespoons sweetened shredded coconut Directions Preheat oven to 400°. In a large bowl, combine pie filling, lemon juice and cinnamon; spoon into pastry shell. In a small bowl, combine the flour and brown sugar; cut in butter until crumbly. Stir in nuts, oats and coconut; sprinkle over pie filling. Bake at 400° for 12-15 minutes or until topping is golden brown. Back to Recipes

Korean style sausage stir fry Ingredients 200 g Vienna sausage 70 g bell peppers 40 g onion 1 Tbsp. cooking oil SAUCE (MIX THESE IN A BOWL) 2 Tbsp tomato sauce (Ketchup) 1/2 Tbsp soy sauce 1/2 Tbsp raw sugar Directions In a heated skillet add some cooking oil and cook the sausage on medium high heat. Stir until the sausage is half cooked (for 1 to 3 mins depending on the sausage). Add the bell peppers and onions. Stir and cook until they are wilted (for 1 to 2 mins). Reduce the heat to medium heat. Pour in the sauce and mix with the rest of the ingredients (for about 1 min). Remove the skillet from the heat. Corned Beef Ingredients 2 tablespoons butter 2 tablespoons extra-virgin olive oil 1 large onion, chopped 5 large Yukon Gold potatoes, peeled and cut into 1/4-inch cubes 1 large carrot, coarsely shredded 2 pounds cooked corned beef, cubed 2 tablespoons chopped fresh parsley ½ teaspoon ground black pepper, or to taste ¼ teaspoon dried thyme leaves 1 pinch salt to taste Directions Gather all ingredients. Melt butter with olive oil in a large skillet over medium heat. Cook and stir onion until lightly browned, about 8 minutes. Stir in potatoes and carrot; cook, stirring occasionally, until tender, about 15 minutes. Stir in corned beef, parsley, pepper, thyme, and salt. Baked Spaghetti Ingredients 1 cup chopped onion 1 cup chopped green pepper 1 tablespoon butter 1 can (28 ounces) diced tomatoes, undrained 1 can (4 ounces) mushroom stems and pieces, drained 1 can (2-1/4 ounces) sliced ripe olives, drained 2 teaspoons dried oregano 1 pound ground beef, browned and drained, optional 12 ounces spaghetti, cooked and drained 2 cups shredded cheddar cheese 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted 1/4 cup water 1/4 cup grated Parmesan cheese Directions In a large skillet, saute onion and green pepper in butter until tender. Add tomatoes, mushrooms, olives, oregano and, if desired, ground beef. Simmer, uncovered, for 10 minutes. Place half the spaghetti in a greased 13x9-in. baking dish. Layer with half the vegetable mixture and 1 cup cheddar cheese. Repeat layers. In a small bowl, combine soup and water until smooth; pour over casserole. Sprinkle with Parmesan cheese. Bake, uncovered, at 350° until heated through, 30-35 minutes. Back to Recipes
- Seasoned Parmesan Cheese | IMB
Creamy Pesto Pasta Ingredients 1 tablespoon olive oil 2 cloves garlic, minced ¾ cup single or light cream (see notes) 25 grams parmesan, finely grated ⅓ cup basil pesto ¼ teaspoon black pepper ½ tablespoon fresh lemon juice Salt to taste Pasta of your choice Directions Heat the olive oil over medium heat and fry the garlic for 1 - 2 minutes, a gentle sizzle. The garlic shouldn't colour or burn. Turn the heat down slightly and add the cream. Bring to a very gentle simmer, it should never boil. Add the finely grated parmesan in two lots, letting each half melt into the cream before moving on. Add the pesto, black pepper and lemon juice and mix well. Let it simmer very gently for 1 - 2 minutes to thicken. Add the cooked pasta straight in, mix and let it gently bubble away for a further 1 - 2 minutes. Add a splash of pasta water if you need to loosen the sauce. Back to Recipes

Potato Pancakes Ingredients 4 large potatoes 1 medium onion 2 eggs ½ cup potato starch ½ tsp. salt ¼ tsp. pepper 2 tbsp. vegetable oil for frying Directions If using food processor: peel and cube the potatoes and onion. Place the vegetables in food processor and process for about 2 minutes, until potatoes look "grated" and no lumps remain. If using grater: peel the potatoes and onion and grate. Place the potato mixture into a fine strainer or kitchen towel and try to squeeze almost all of the liquid into a mixing bowl. Discard the liquid. You'll notice white powder on the bottom of the bowl after you pour the liquid out. It is potato starch and it gives texture to the pancakes, so you should keep it. Return the potato mixture into the bowl and add eggs, potato starch, with some salt and pepper, and mix everything well. Heat up some vegetable oil in a large, non-stick skillet over medium heat. Add a spoonful of potato mixture, spreading it slightly. Fry for about 2-3 minutes on each side, until the pancakes are crispy and brown. Place the pancakes on a paper towel, to absorb the excess oil and ENJOY! Back to Recipes
